It is here that sheep outnumber people, and this true remove is utterly romantic––as though you’ve absconded with your lover to an Eden shrouded in mist, and so long as you remain the troubles of the world beyond do not concern you. The former farm accommodates no more than 32 guests at a time and is therefore perennially quiet and contemplative, and the range of activities in the wintertime is particularly spectacular. Banner excursions include heli-skiing virgin slopes and fly-fishing, but this is only the beginning. There’s also a trek to Langhus Farm for rides aboard Icelandic horses and views of the Arctic Circle over the Greenland Sea.

Along with all that gorgeous pine—sloping beamed ceilings, slated wood terraces, four-posters, and open fireplaces—comes comfort: a cozy mix of textures and muted shades from silvered cow-skin rugs and creamy flannels to soft wool plaids and deep leather sofas, plus the occasional baroque carved antique. After a stint on the powdery slopes, have lunch on the terrace of Le Restaurant Alpin and order the divine three-cheese fondue—worth every calorie. With just 20 accommodations, including cottages and rooms in a farmhouse, the resort is at once intimate and charming, but doesn’t skimp on modern perks. The rate is all-inclusive, folding in the hotel’s locally sourced, rightfully acclaimed food—which changes so regularly that chef Nathan Rich won’t even put out a daily menu—and glasses of vino from the property’s 15,000-bottle collection selected by sommelier Keven Ring. (And if you’d prefer to enjoy your meal in your room rather than in one of the dining areas, that can be arranged, too.) By the time Belmond acquired the property in 2017, an update was long overdue—and just a week after they closed it, Hurricane Irma rolled through, destroying everything but those sugar-cube villas. It reopened again in late 2018 with five new villas, two new restaurants (including a revamped Pimms), and a gleaming spa—when just days later, LVMH announced it had reached a deal to acquire Belmond, as sure a sign as any that the smart set will continue to find their way to this Maundays Bay luxury resort for years to come. Of course, you’ll spend plenty of your time laying out on the beach, but don’t ditch the villas during the daytime altogether—outfitted with four-poster beds, linen curtains that balloon when the door opens, and soft Beni Ourain carpets, they transform a late-afternoon nap into a pleasure without the guilt.

While retaining an old-school, aristocratic vibe, Adare's fanciful gargoyles, genuinely warm staff, grand and intimate spaces, and super-comfortable rooms make it somewhere uniquely and unabashedly the Ireland of right now—with a recently redesigned golf course, courtesy of pro architect Tom Fazio, and falconry to boot. Also of note here: There are 365 leaded windows, 52 ornate chimneys, four towers, and seven stone pillars, symbolizing the days, weeks, and seasons in a year, and the number of days in a week. (When it was built in 1860, it was in the Neo-Gothic “calendar house” style.) A good omen for long-lasting relationships, no?

It’s not just what you see, by the way, but the entire sensory experience—crashing waves audible from your personal balcony and from the terrace restaurant, as well as just about everywhere else, and crisp salty air lulling you into a peace that’s impossible to break. Spot wales, dig into some branzino, sip a local red, and just enjoy.

Allow them to organize a beach picnic—a gourmet spread to be enjoyed at sunset. You can also arrange kiteboarding lessons, sunset sailing, and aerial yoga. Fan of vintage cars? Clipped white roses sat beautifully arranged on Florio’s dressing table during her stay there, and she notes a particularly deep bathtub on hand for sleepy soaks. This is what it must feel like, one can’t help but think, to keep a pied-a-terre uptown, to come and go at your leisure in Manhattan’s most exclusive neighborhood. It’s important to note that, at this address between Fifth and Madison, you are not far from Central Park. The Mark does not take such proximity for granted, offering to deliver guests an all-out picnic via pedicab complete with basket, blankets, and loungers.

In 1892, this palace became the Hotel du Palais, and in 2021 this hotel reopened after a tremendously ambitious 4-year renovation. After all of these years and all of these changes, the sense of tender and decadent dedication not only remains but prevails. Think a ballroom frescoed with fairytales perfect for a waltz, and a sumptuous bar lit by a 900-pound crystal chandelier. Loveliest of all is the vast Guerlain Imperial Spa, named for the perfumier who invented a cologne special just for Eugénie. Within these walls, everything is a gift crafted specially for you.

And while it may look new—rooms have all been updated with plenty of wood and neutrals, 15 luxe safari-style tents have been added to the roster (though tent guests don’t currently have access to the resort, and are no longer subject to the resort fee) and the spa got a relaxation deck that looks out at the ocean—it hasn’t lost its laid-back 1970s vibe. If you want to totally disconnect, and plug in those connectivity-deprived gaps with hiking, forest bathing, spa treatments, and yoga, it’s for sure worth it. There really is something for everyone here—except for maybe the type-A person who needs lots of scheduled activities. Big Sur truly is one of the most beautiful places on earth, and Ventana’s mission is to spotlight and champion its setting.
